novembre, mantenendo un numero di 8-9 gemme per ceppo. Da maggio, con la scacchiatura e la spollonatura vengono eliminati i germogli superflui e legati quelli principali; sono operazioni basilari per mantenere un buon equilibrio vegetativo e produttivo della pianta, soprattutto nel caso di vigneti giovani. Il mosto fiore, chiarificato, sfecciato e travasato, dopo circa un giorno, viene fatto fermentare in vasche d\u2019acciaio ad una temperatura controllata di 15\u00b0\/16\u00b0C. Dopo un periodo di affinamento in acciaio, vengono assemblate le partite migliori e preparata la cuv\u00e8e che subisce stabilizzazione proteica e tartarica ed una filtrazione; nel \u201ctiraggio\u201d viene messa in bottiglie champagnotte insieme ad una liqueur de tirage, composta da vino, zucchero e lieviti selezionati. Le bottiglie vengono tappate con bidule e tappo a corona e accatastate in cantina a rifermentare ad una temperatura costante di 15\u00b0C; l\u2019affinamento di post-fermentazione sulle scorze di lievito dura almeno 33 mesi, prima di passare al remuage delle bottiglie.
